What Is an Offset Spatula?

1. Spreading Buttercream Between Cake Layers

Place your buttercream or filling onto the cake layer, then use the offset spatula to gently spread it towards the edges.

Try to keep the filling as even as possible so your cake layers stack neatly.

Beginner tip:
Start in the centre and spread outwards. Use gentle pressure so you do not tear the cake.

2. Applying Buttercream to the Top of a Cake

Add buttercream to the top of your cake and use the flat blade of the spatula to spread it across the surface.

You do not need it to be perfect at first.

The goal is to practise your pressure, movement, and control.

Beginner tip:
Hold the spatula at a slight angle rather than pressing it flat into the cake.

3. Helping With a Crumb Coat

A crumb coat is a thin layer of buttercream that helps trap cake crumbs before the final coat of icing goes on.

Your offset spatula is useful for spreading this thin layer around the cake.

Beginner tip:
Use a small amount of buttercream and spread gently. It is okay if crumbs show through — that is what a crumb coat is for.

4. Smoothing Small Areas

While a bench scraper is often used to smooth the sides of a cake, an offset spatula is helpful for smaller areas.

What Size Offset Spatula Should You Use?

A medium offset spatula is useful for filling cake layers, spreading buttercream, and general cake decorating.

A larger offset spatula can help when spreading sponge batters, larger fillings, or working across bigger surfaces.

In my bakery, I use different sizes depending on the job. For cakes, I often like a small to medium blade because it gives me more control. For larger baking tasks, like spreading sponge sheets, a longer blade can be helpful.

If you are just starting out, a small or medium offset spatula is a great beginner choice.

Offset Spatula vs Straight Spatula

You may see both straight spatulas and offset spatulas in cake decorating.

If you are learning cake decorating, I would say yes — an offset spatula is one of the most useful tools to have in your beginner kit.

You do not need every tool in the cake decorating aisle.

But a few good foundational tools can make learning feel much easier.

An offset spatula is useful because it helps with so many beginner techniques, including filling, spreading, crumb coating, smoothing, and creating texture.

It is a tool you will likely reach for again and again.

A Simple Skill Stacking Practice Activity

Here is a simple way to practise using your offset spatula.

You will need:

✨ A plate, tray, or cake board
✨ A small amount of buttercream
✨ Your offset spatula

Practise:

  1. Spreading the buttercream in a thin layer
  2. Holding the spatula at different angles
  3. Using light pressure, then slightly firmer pressure
  4. Creating smooth strokes

  6. Scraping the buttercream back and trying again
